Cookies!

After joining in at a local coffee shops holiday promotion yesterday(decorating cookies to bake) Master 2 keeps wanting to eat more. He associates cookies with the Cookie Monster from Sesame Street, which comes with the appropriate actions of course! Ever seen Cookie Monster eating?? So how can I resist when he goes to all that trouble to tell me what he wants?!

Having my oven fixed meant we could make our own! I’ll let the photos tell the story…

The recipe is from Stay at Home Mum. 120 biscuits for under $5. Thats ozzie dollars so a little bit more for NZ dollars, but still cheap. I divide the mixture & add different ingredients (eg peanut butter, coconut, raspberry essence, mint essence, cocoa powder etc etc) I then cook about a quarter of the dough & freeze the rest. I roll each flavour into a log & then freeze in plastic wrap. It unfreezes super quick, I cut into pieces, flatten with a fork & it’s ready for the oven. We did end up eating alot of the dough in the process so I’m not sure how many we will end up getting in total. But the last time I made these I got out about 90, also with liberal tasting beforehand. I also didn’t have condensed milk on hand(surprise!) so I subbed the following as per their instructions instead:

SWEETENED CONDENSED MILK SUBSTITUTE

  • 2 eggs
  • 1 cup brown sugar
  • 1 teaspoon vanilla
  • 2 tablespoons flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Mix all ingredients and use as a substitute for sweetened condensed milk.

Still a good deal I reckon. Now for the actual recipe…

120 Biscuits for Less than $5!

Make over 120 yummy biscuits for just less than $5! This fantastic basic recipe is terrific value, makes loads and has lots of room for variations:

  • 500g butter or margarine
  • 1 tin condensed milk
  • 1 cup sugar
  • 5 cups self-raising flour

Cream sugar and butter. Add condensed milk and flour. Roll into teaspoon sized balls and press down with a fork. Place on greased trays and bake in moderate oven (approx 180 degrees C) until golden brown (approximately 10-15 minutes).  For a less ‘floury’ biscuit – substitute half a cup of flour for 1/2 cup of custard powder.
