Everyone knows that I’m a sucker for any chocolate, peanut butter combo. So when the craving strikes & you happen to have a bag of dark chocolate chips in the cupboard, left over from from a certain party, what better way to use them than in homemade peanut butter cups! G.E.N.I.U.S!
I melted some with the “help” of Master 3. In reality he stood up at the counter, holding the mini muffin tin demanding we make cake. When I spooned in enough melted choc to cover the bottom of each, he was most put-out by the fact we weren’t actually making cake. He thinks that every day should be his birthday, cake & all!
A few minutes in the freezer to harden & then I added a small dollop of peanut butter to half, & a whole cashew nut to the other half. Covering each in more of the melted choc. Not quite the quality of Reece’s Peanut Butter Cups but, no doubt, a fraction of the sugar & salt!

The Verdict : Hubby doesn’t like dark chocolate so I had an uphill battle to convince him to even try one. He ate it but has yet to have another! The boys only got to lick the spoons so they can’t give you an honest opinion. So you will have to take my word for it that they were yum. Next time though (and there will be a next time, I have most of a bag of chocolate chips left!) I will be making the outer coating much thinner, maybe the bigger muffin tin with a larger filling & less chocolate. I prefer chocolate that doesn’t aspire to break your teeth when you bite into it!
